HOSPITALITY AND CATERING QCF DIPLOMAS
Levels 1, 2 and 3 (Certificate, Diploma and Advanced Kitchen & Restaurant Diploma)
These courses are for those interested and enthusiastic about a career in the hospitality and catering industry. Training and assessment is carried out within the College kitchens and training restaurant which operate as a realistic working environment. These courses will develop the practical and technical skills required for today’s chef and food service professional.
LEVEL 1 & 2 DIPLOMA IN FOOD AND BEVERAGE SERVICE
One year
This course is a good introduction to the food and drink industry. Units covered during the course include:
Working in a professional kitchen
Maintaining a safe and secure working environment
Developing effective relationships
Customer care
Dealing with payments
Table service
Preparing and clearing areas for table service
Understanding the catering and hospitality industry
Health and safety
Healthy eating
Cooking skills such as boiling, poaching, steaming, stewing, braising, baking, grilling and frying.

This course will build on the skills and knowledge gained through the Level 2 qualification. Students will learn more advanced catering skills, techniques used to produce different types of foods and an introduction to supervisory skills. Units will include:

LEVEL 3 HOSPITALITY SUPERVISION AND LEADERSHIP
This course is designed for the front of house professional. It can be tailored to meet a variety of industry specialism’s. Mandatory units include:
